Cheddar Chicken & Rice Skillet

Decided to make dinner for my fam the other night. Things get hectic & people are tired so we don’t usually have home-cooked meals anymore.

I thought some Cheddar Chicken & Rice Skillet was easy enough & could get the job of feeding us done. I stole the recipe (because who am I kidding, I’m not that good!) from a Food & Family magazine from like 2006. Below are the ingredients & steps.

1/2 Cup Zesty Italian Reduced Fat Dressing

2 Cups Minute Brown Rice, uncooked

1 1/4 Cups fat-free reduced-sodium chicken broth

2 Cups small broccoli florets

1 1/2 Cups chopped tomatoes

4 boneless skinless chicken breast halves, cut into strips

1 Cup cheddar cheese

1/2 Cup sliced green onions

Feel free to play around with the amount of ingredients or you can even opt things out. Can’t really mess this one up.

Steps

Heat dressing in large non-stick skillet on medium-high heat. Add chicken; cook & stir 2 minutes.

The size is up to you but bigger is probably better since chicken tends to shrink once it’s cooked.

Stir in rice, broth & broccoli. Bring to boil; cover. Reduce heat to low; simmer 5 minutes or until chicken is cooked thoroughly & rice is tender. Let stand covered, 5 minutes or until liquid is absorbed.

This is where I had a little trouble. Our stove is going through an annoyingly rough patch in its life so it really only works on the highest setting, so simmering wasn’t an option because it would’ve completely stopped cooking. Anyways, the broth wouldn’t absorb so I just had to take the cover off. With that said, it’s a super easy meal & shouldn’t be any trouble.

Since this particular meal had the “sides” inculcated, rice & vegetables, I made a salad to go along with it that was pretty tasty. I won’t include a detailed description just because it’s a salad, so, happy tossing basically!

Salad Ingredients

Romaine lettuce, spinach (or any mixed salad greens)

Ranch Dressing

Granny Smith apple wedges

Red grapes (I forgot to buy these)

Shaved Oven Roasted Turkey Breast, cut into strips

Cheddar Cheese crumbles

Real Bacon bits (optional)

Toss them all together and that’s all!

I made some cherry kool-aid & set up the dinner table in a simple but cute enough manner. This is also optional. 🙂
